Nothing warms up cold, brisk weather like the perfect bowl of chili. This delicious chili recipe is a family favorite, and will warm you up from the inside out. Return to your new or used RV from HitchRV at the end of a gorgeous day spent hiking and exploring, and settle in comfortably with a bowl of perfectly seasoned chili. Best of all, this recipe can easily be started in the morning by opening a few cans, and left to simmer for several hours in a Crock Pot. Put dinner out of your mind the moment breakfast dishes are cleared and enjoy the day!
Tools you’ll need:
- Skillet
- Spatula
- Can opener
- Crock Pot
- Cutting board
- Sharp knife
Base ingredients:
- 2 pounds ground beef
- 1 quart tomato juice
- 1 (29 ounce) can tomato puree
- 1 (15 ounce) can red kidney beans, drained
- 1 (15 ounce) can pinto beans, drained
- 1 medium onion, chopped
- 2 stalks of celery, diced
- ½ green bell pepper, diced
Seasoning:
- ¼ cup chili powder (use less for milder chili)
- 1 teaspoon ground cumin
- 1 ½ teaspoons garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried oregano
- ½ teaspoon sugar
- 1/8 teaspoon cayenne pepper
Now. First step: Take a look at all those ingredients. Take a breath. You’ve got most of this already. Much of this stuff is canned, or otherwise dry goods. Still, no one wants to clog up their pantry space in their RV for the 1/8 teaspoon cayenne pepper you’re going to need. Prep your seasoning ahead of time, before you even leave home! Place all dry seasonings together in a Ziploc bag, label it, and away you go.
How about those two stalks of celery? Plan to use the rest of the celery in other soups, such as a hearty chicken noodle, or keep on hand for a veggie tray with dip for grab and go snacking on a day you’re hanging around the campsite. Or, pre slice and dice all veggies, place in Ziploc bags, and store in your freezer.
Time to prep. Brown the meat in a skillet and drain well. In the meantime, if you are chopping up the veggies as you need them, do that while the meat browns. Place all ingredients in a Crock Pot that has at least a 6 quart capacity. Cover with lid, and let the chili simmer on low heat for 4+ hours. Enjoy with crackers, shredded cheese, and sour cream.
