Ingredients
- ½ lb. strip steak
- 1 tsp. salt
- 2 tbsp. oil
- 8 oz. mushrooms
- 1 small brown onion
- 2 cloves garlic
- 1 ½ c. broth
- 1 tbsp. Worcestershire sauce
- 1 tsp. thyme
- ¼ lb. wide egg noodles
- ½ c. full fat sour cream, divided
Instructions
- Wash and dry all your produce.
- Then carefully quarter the mushrooms, dice the onion, and peel and mince the garlic.
- Slice the strip steak into 1/2″ lengths, pat dry with a paper towel, and season with salt and pepper.
- Heat a drizzle of oil on high in a 10″ skillet until the oil is smoking. Add the strip steaks and sear until browned on every side.
- Remove from the skillet and set aside, covered, to rest.
- Reduce the heat to medium and dump in the mushrooms. Sauté for 5-7 minutes, stirring only 2-3 times to ensure they soften and brown properly.
- Add the onions and cook for another 5-7 minutes until browned and fragrant.
- Stir in the garlic and sauté for 1 minutes.
- Immediately add the broth to avoid burning the garlic. Also dump in the Worcestershire sauce and thyme.
- Return the heat to high and deglaze the pan with a wooden spoon. Allow the liquid to come to a rolling boil.
- Add the noodles to the skillet and cook until al dente using the package instructions.
- Remove the noodles from the heat and prepare the sour cream for the skillet by tempering it carefully. You’ll need to add half the sour cream to a small bowl and spoon a couple tablespoons of broth into the sour cream. Stir until blended, then add to the skillet.
- Once the tempered sour cream is incorporated, add the rest of the sour cream slowly, stirring constantly to combine.
- Check that the steak is properly rested and slice into bite-sized pieces before adding to the skillet.
- Season with salt and pepper and serve!
